- Soak: Rinse 1 cup My Natural White Peas. Soak in plenty of water for 8-10 hours or overnight.
- Pressure Cook: Drain soaked peas. Pressure cook with 2.5-3 cups fresh water, 1/2 tsp turmeric, and salt for 5-6 whistles until very tender.
- Prepare Base: In a pan, heat 1 tbsp oil. Add 1/2 tsp cumin seeds, then add 1 chopped onion, ginger-garlic paste, and green chillies. Sauté until golden.
- Add Tomatoes & Spices: Add 1 chopped tomato. Cook until soft. Add 1 tsp coriander powder, 1/2 tsp red chilli powder, 1/2 tsp cumin powder, and 1/2 tsp chaat masala. Cook for 2 minutes.
- Combine & Simmer: Add the cooked White Peas (with their cooking water) to the masala. Mash a few peas lightly for a thicker consistency. Simmer for 5-7 minutes.
- Serve Chaat: Serve hot in bowls. Garnish with chopped onions, tomatoes, coriander, a squeeze of lemon juice, a dash of tamarind chutney, and sev (optional).
