Simple Recipe: How to Make Soft Idli Batter with My Natural Urad Gota (Yields ~8 cups batter)

  1. Master perfectly soft and spongy idlis with My Natural Premium Urad Gota!

    1. Ingredients: 1 cup My Natural Urad Gota, 2 cups Idli Rava, 1/2 tsp Fenugreek (Methi) seeds (optional, aids fermentation), Salt to taste, Water for soaking and grinding.
    2. Soak: Rinse Urad Gota thoroughly and soak it along with fenugreek seeds in plenty of water for 4-6 hours. Rinse Idli Rava and soak it in a separate bowl for 30 minutes to 1 hour, then drain completely and squeeze out excess water.
    3. Grind Urad Gota: Drain the soaked Urad Gota. Grind into a very smooth, fluffy, and light batter using a wet grinder (preferred) or mixer grinder, adding small amounts of chilled water as needed. The batter should be airy.
    4. Combine & Ferment: Transfer the ground urad gota batter to a large bowl. Add the drained and squeezed Idli Rava to this batter. Add salt to taste. Mix gently but thoroughly with your hand (this aids fermentation) or a spoon. Cover the bowl and let it ferment in a warm place for 8-12 hours, or until the batter doubles in volume and becomes airy.
    5. Steam Idlis: Once fermented, gently mix the batter once more (do not overmix). Grease idli moulds with a little oil. Pour the batter into the moulds. Steam the idlis in an idli cooker or steamer for 10-12 minutes on high flame, or until a toothpick inserted comes out clean.
    6. Serve: Let them cool for a minute, then gently de-mould. Serve hot with sambar, coconut chutney, or podi!
