- Ingredients: Take 2 cups My Natural Maida Flour, 1/2 tsp salt, 1 tbsp oil/ghee (for dough + for kneading), and approx. 1/2 cup water (or as needed). Oil for deep frying.
- Make Dough: In a large mixing bowl, combine Maida Flour and salt. Add 1 tbsp oil/ghee and rub it into the flour. Gradually add water, mixing and kneading until you form a firm, yet pliable dough. Do not make it too soft.
- Rest: Cover the dough with a damp cloth and let it rest for at least 15-20 minutes. This helps the dough become more elastic.
- Roll Puris: Divide the dough into small, equal-sized balls. On a lightly greased surface (do not use dry flour for rolling puris as it burns the oil), roll each ball into a thin, even circle (approx. 4-5 inches in diameter).
- Heat Oil: Heat enough oil for deep frying in a deep kadai or pan over medium-high heat. The oil should be hot but not smoking.
- Fry Puris: Gently slide one rolled puri into the hot oil. As it floats, gently press it down with a slotted spoon to help it puff up. Once puffed, flip and fry until light golden brown on both sides.
- Drain & Serve: Remove with the slotted spoon and drain excess oil on paper towels. Serve hot with aloo sabzi, chana masala, or any curry of your choice.
