- Tempering: In the same pan, heat 1 tablespoon of oil or ghee. Add 1/2 teaspoon mustard seeds, 1/2 teaspoon urad dal, 1/2 teaspoon chana dal, and a few curry leaves. Sauté until the dals turn light golden.
